ペガサス・ベイの醸造家を2年、セレシン・エステートの醸造家を12年間 務め、16年の醸造経験を持つワイン醸造家、クライブ・ドゥーガルと、自身が運営する「ニュージーランド・ワイン・ポート フォリオ」でニュージーランドのブティックワインを世界に発信してきたピーター・ ロリマーが新たなる旅路を求めて創設しました。
Deep Down Winesは、直感と心を込めて造られた、誠実なワインを提供するこ とを目指しています。

クライブ・ドゥーガル (Clive Dougall)
小売業、レストラン、そして過去16年間はワイン醸造家として、あらゆる分野で25年以上にわたるワインの経験を持つ。
リンカーン大学卒業後、ワイパラのペガサスベイ、マールボロでオーガニックなセレシン・エステートのワイン醸造家として14年間携わると共に、オーガニックに深く情熱を抱き、不要な添加物を使用せず、複雑で質感豊かで美味しいワインを生産するためにワインメーキングの技術を磨き続ける傍ら、 Organic WINE GROWERS NEW ZEALANDの議長を務めている。
ピーター・ロリマー (Peter Lorimer )
メルボルンを経てロンドンに移り、 ドーチェスターホテル（The Dorchester)のヘッドソムリエを務め、その後リー・アンド・サンデマン・ワインマーチャント(Lea & Sandeman)のロンドン・トレード・マネージャーとして活躍。
過去8年間、ニュージーランドのワインポートフォリオを担当し、世界中でブティックなニュージーランドの生産者のプロモーションを行う。
オーガニックに情熱を抱き、発酵したブドウが時を重ねる毎に複雑で示唆に富み、そして甘美な飲み物になる様子を愛している。

Organic Sauvignon Blanc
VINEYARD - Murrays Vineyard. Ashmore Vineyards - Sutherland Family
Close to the Southern side of the Wairau Valley, this vineyard is at the foothills of the Wither Hills.
The soils are dominated by the fine clay particles of the Southern valleys, but sit over free-draining gravels, offering this variety the best of both worlds. - ripeness and texture from the clay, with freshness and structure form the gravels.
Fermented naturally in a mix of stainless steel and old 500L barrels, with the majority moving through malolactic fermentation, we aim to produce a sauvignon blanc that offers a different expression to the typical wines from Marlborough.
One that celebrates texture and concentration, rather than high volume aromatics and acidity.
ぶどう畑 - マレーズ・ヴィンヤード。アシュモア・ヴィンヤーズ - サザーランド・ファミリー
ウィザーヒルズの裾野近く、 ワイラウ渓谷の南側に位置するヴィンヤードです。
この南部の谷に位置する土壌は、水捌けの良い砂利の上に微細な粘土粒子があり、この品種にとってベストな状態を提供しています。
粘土からの熟成と質感、砂利からの新鮮さとストラクチャーが共存しています。
ステンレスタンクと500リットルの古樽のミックスで自然発酵を行いながら、大部分をマロラクティック発酵させることで、マールボロの典型的なワインとは異なる表現を提供するソーヴィニヨン・ブランを目指しています。
それは香りと酸味の高いワインではなく、質感と濃縮を讃えるものです。
Organic Pinot Noir
VINEYARD - Poplar's Vineyard. Ashmore Vineyards - Sutherland Family
Housing some of the oldest vines in Marlborough, this vineyard sits at the intersection of the Brancott and Wairau Valleys.
Soils are very similar to Murrays, with clay rich top soil's overlaying free draining gravels.
These 32 year old PinotNoir vines are low yielding and produce beautifully perfumed and focused wines with a softness derived from the clay in the soil.
Fermented naturally in open top fermenters to achieve a soft and gentle extraction, this wine is made using no additions whatsoever.
Simply organic grapes in a bottle!
ぶどう畑 - ポプラーズ ヴィンヤード。アシュモア・ヴィンヤーズ - サザーランド・ファミリー
マールボロの中で最も古いブドウの木の一部を擁するこのヴィンヤードは、ブランコット渓谷とワイラウ渓谷の交差点に位置しています。
土壌はマレーズと非常に似ており、粘土が豊富な表土がよく排水される砂利の上に広がっています。
これらの32年前のピノ・ノワールのぶどうの木は低収量であり、土壌中の粘土から生まれる柔らかさを持つ美しい香りと焦点を絞ったワインを生み出します。
自然発酵を使い、オープントップの発酵槽で柔らかくて穏やかな抽出を実現し、このワインは添加物を一切使用せずに作られています。単純にオーガニックのぶどうがボトルに詰められたものです！
Organic Chardonnay
VINEYARD - The Wrekin. Andrew and Jan Johns
A stunning hillside biodynamic property situated in The Wrekin Valley on the southern side of the Wairau Valley.
The vineyards soils are predominantly rich clay, supplying the wine with texture and finesse.
Fermented naturally, the wine spends 9 months in large 500L barrels of which 15% are new.
ぶどう畑 - ザ・レキン。アンドリュー アンド ジャン・ジョンズ
ワイラウ・バレーの南側に位置する丘陵地帯の見事な有機農法のぶどう畑で育てられたシャルドネ種より造られたオーガニック・シャルドネ。
ぶどう畑の土壌は主に豊かな粘土で、ワインに質感と洗練さをもたらしています。
自然発酵を経て、15%が新樽の500リットルの大樽で9ヶ月熟成。

「Morningcider（モーニングサイダー）」は、オークランドの Morningside コミュニティから生まれた、ニュージーランドを代表するクラフトサイダーブリュワリーです。
ニュージーランド産リンゴのみを使用し、人工香料を一切使わず、果実本来の香りと味わいを大切にしたサイダーづくりを行っています。
自然な風味を守るため、添加物は必要最小限にとどめ、地域のクリエイティブな文化と遊び心を取り入れながら、独自のスタイルを築いてきました。
地元のアーティストやクリエイター、職人たちとのコラボレーションを通じて、コミュニティに根ざしたブランドとして成長しています。
Morningcider は、100％ニュージーランドの素材と自由な発想から生まれる、誠実で個性的なクラフトサイダーを提供することを目指しています。

Hazy Apple IPA
Morningcider’s Hazy Apple IPA is a bold, dry cider packed with a heavy dry hop from big New Zealand hop varieties. Pushing the boundaries between cider and beer, it’s a hazy hybrid made for IPA lovers and cider fans alike.

暁ブルワリー, 岩手八幡平
「暁ブルワリー（Akatsuki Brewery）」は、
2016年に東京都世田谷区で自然栽培農家の果実や野菜を用いた健やかなビールづくりを目指して誕生した、ブルワリーです。
その歩みの原点には、2011年の東日本大震災の支援活動があります。
岩手県宮古市田老の海で見た“暁”の光景 -
夜明け前の黒い海を照らしはじめる一筋の光、赤く染まる雲が龍のように舞う姿に、
「変化しながら生まれ変わる未来への可能性」を感じ、その想いをブルワリー名に込めました。
2020年9月、暁ブルワリーは岩手県八幡平市に「暁ブルワリー八幡平ファクトリー」を開業。
ここは岩手山の麓、豊かな自然に囲まれた郷山に位置し、日本名水百選「金沢清水湧水群」に代表されるミネラル豊富な湧水に恵まれた土地です。
七つの水源を持つこの湧水は、龍の伝説が残る神秘の水。毎時約450トンという豊富な湧水量と高い水質は、ビール醸造に理想的な環境をもたらしています。
さらに、醸造エネルギーには八幡平の地熱を活用。“山の火と水の恩恵を受けた醸造所” として、自然と共生するサステナブルなビールづくりを実践しています。
その取り組みは2022年12月、 日本のビール分野で初となる 有機JAS認証 の取得へと結実しました。 オーガニックであることは、 土壌の生態系を育み、自然環境を守るための基盤。 天然水・オーガニック原料・地熱エネルギーという三本柱で、 「人と自然にやさしいビール」を追求しています。
正真正銘のオーガニックビール
添加物を一切使用せず、岩手山の湧水と地熱エネルギーを活かしたサステナブルな醸造で、 健やかで奥行きのある味わいを追求する、暁ブルワリーのオーガニックビールです。
自然の恵みをまっすぐに表現するための揺るぎない姿勢と丁寧な手仕事が、 清らかで力強い“本物の一杯”を生み出しています。
